When you eat the typical American diet of fatty meats, processed cold-cuts, fried foods, dairy products, eggs, commercially-baked breads, cakes, cookies and fast food you are on the high cholesterol pathway. Only a fraction of the population could eat this kind of high fat and not have a collision with high cholesterol. Did you know you really don’t even have to eat any cholesterol? Your body makes all it needs!
Unfortunately we are eating too much of the wrong foods. But because I’m Dr. Walker, help is on the way! Avoid saturated fats. These fats are found mostly in animal products like cheese, butter, cream, ice-cream, whole milk, lard and marble meats. Buy the leanest cuts of meat and try to eat fish and poultry without skin on a regular basis. Buy low-fat foods, forgo frying, eat no more than 2 egg yolks per week. Eat vegetables and complex carbohydrates like grains (rice, barley and pasta) beans, and legumes.
Substitute these for meat and high-fat dairy products. Don’t drown your pasta in butter or your baked potato in sour cream. Use tomato based sauces or lemon juice and herbs to season vegetables. Make meatless chili with loads of vegetables on the side. Exercise, stay well-hydrated with plenty of water and lose the weight.
