Recipe of the Week: Roasted Chicken Pasta Salad

Hello everyone! Are you sad that summer’s over? I enjoy all the seasons but summer is definitely my favorite! You know a diva loves hanging out at the beach! Here’s one of my favorite new recipes for you all to try. Let me know what you think!

Roasted Chicken Pasta Salad


1 bunch green onions chopped (about 3/4 C)

1 pint grape tomatoes

2 cups baby spinach

1 5oz package crumbled gorgonzola cheese

5 T unsalted butter

1 herb-roasted whole chicken (skin removed and meat diced)

1 16oz box rotini pasta

1 1/2 C Romano Cheese Dressing

3 T extra virgin olive oil


Prepare pasta as per box instructions. Drain pasta and cool for 15 min. In a large bowl, toss pasta with ingredients. If not serving right away cover and refrigerate overnight. Toss salad well before serving.

Each serving: About 600 calories, 29 g total fat, 55 mg cholesterol, 1290 mg sodium, 69 g carbohydrate, 6 g fiber, 36 g protein
